Ingredients
110g ricotta cheese
110g parmesan cheese, grated
500g chicken or lean beef mince
1 tablespoon of fresh chillies, chopped
2 tablespoons of fresh chives, chopped
Cracked black pepper.
Step by Step Guide
Add minced meat to a large bowl
Add parmesan cheese
Stir in ricotta cheese
Evenly mix in chillies, chives and pepper
Grab a small handful of the mixture and roll into a ball (each meatball should weigh approximately 40g each x 18 meatballs)
Place each meatball on a tray lined with baking paper
Bake meatballs in a pre-heated oven for 30 minutes at 180° degrees.
Suggestions
Add additional chillies, chives and pepper to suit your individual taste
Serve with a dollop of sour cream or a tangy dipping sauce
